This is the apples harvesting season in Lebanon!
Yesterday I received plenty of apples from 2 of our cousins, making my fridge almost full. Although my kids love apples, but I’ve got a lot so I had to do something with them before they end up rusting.
An apple-cinnamon cake was the result 🙂
6 apples cut into chunks
1 Tablespoon cinnamon
3 Tablespoons brown sugar
2 3/4 cups all purpose flour
1 teaspoon salt
2 cups sugar
2 teaspoons vanilla
1/3 cup orange juice
1 cup chopped walnuts
Preheat oven to 180º C.
Mix apples, cinnamon and sugar in a bowl and set aside.
Mix flour, baking powder and salt together in a different bowl and set aside.
Beat eggs and sugar, then add vanilla, oil and orange juice.
Add dry ingredients to the wet ones, then fold in chopped walnuts.
Pour the batter into the pan, then spread the cut apples on the top.
Bake for 1 ½ hours, or until toothpick comes out clean.
